Ingredients

  • Diced eggplant
  • Chickpeas (rinsed)
  • Garlic clove (minced)
  • Diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • Cauliflower rice
  • Salt and pepper

Cooking instructions

    1. Sauté eggplant and garlic until soft.
