Grilled chicken with avocado and mixed greens

This dish represents more than just a meal; it’s a symphony of textures, a fusion of vibrant ingredients, and a testament to the philosophy that food can be both delicious and good for you. The addition of various toppings and dressings allows for endless variation, and taking just 30 minutes to prepare and cook, it’s ideal after a long day. 

 

Ingredients

  • Skinless chicken breasts
  • Mixed  salad greens (arugula, spinach, lettuce, etc.)
  • Ripe avocado, sliced
  • Cherry tomatoes, halved
  • Red onion, thinly sliced
  • Cucumber, sliced
  • Vinaigrette (olive oil, lemon juice, salt, pepper)

 

Cooking instructions

    1. Season and grill chicken until cooked through, about 5-7 minutes per side.

   2. Arrange mixed greens, onion, tomatoes, cucumber, and avocado on a plate.

   3. Add sliced chicken on top and drizzle with vinaigrette.
